The kid has done it and now I know; don’t over cook and don’t under cook a turkey!
The key to perfection! Is it the meat thermometer or the timer. Is it the exact science of knowing how your oven cooks (maybe it runs hotter than the dial indicates). Or is it luck that you can tell by smell, visual inspection and a gut sense that things are finished.
My 8 to 10 pound utility grade turkey (missing one wing) is now in a freezer bag waiting for its next act! The breast meat and some other random pickings are also separately bagged and in the freezer.
The question is, with the meat being rather dry AND the carcass now gracing the fridge, what shall I endeavor to create.
Turkey potluck: make everything and anything out of the left overs.
I had a turkey bun this morning. That was pretty fine! Nothing beats home-made buns. I didn’t go that extra mile to make them, my mom did. I did not cook my own pumpkin pie – even though I do have one – that’s another adventure for another time.
Our dinner was pretty tasty … turkey, mashed potato and parsnips, gravy. Boxed dressing! Brussels sprouts casserole, quinoa salad. Pumpkin pie with topping. End of – three of us at the table and “to-go” plates and its all over.
A busy day of cleaning, re-arranging and setting the table for an evening meal with family. I acknowledge and salute those that fed up to 20 persons. I hope you rest well for the remainder of the week!
