Saskatchewan-grown purple wheat is a small but interesting niche market in the baked goods, noodles and even vodka market.
The co-owner of Hetland Seeds, Bill Hetland of Naicam, was one of the first to grow purple wheat developed at the University of Saskatchewan from ancient wheat strains in Ethiopia.
Hetland says the wheat offers a unique color and malty taste.
He says the key goal is to expand markets for Saskatchewan farmers.
Studies have also found the purple wheat has health benefits from antioxidants.
