If you’re like my family we are still making our way through our Thanksgiving leftovers. Turkey, ham, mashed potatoes, squash, beets, stuffing, gravy, cranberry sauce … all for Breakfast, Lunch, and Supper. That’s the Cherry side of the family. If it was with my in-laws, sub out with perogies, mushroom sauce, cabbage rolls. What do YOU do with the left-overs?
The good ole’ internet says:
**Hearty Turkey Soup** Turn turkey scraps and bones into a comforting soup. Simmer with veggies, noodles, or rice for a nourishing meal that warms you from the inside out.
**Turkey Pot Pie** Mix diced turkey with leftover veggies and gravy, top with a flaky crust, and bake until golden. It’s the perfect way to enjoy a cozy, homestyle dinner.
**Turkey Tacos or Quesadillas** Give your leftovers a spicy twist! Shred turkey and add taco seasoning for quick tacos or layer with cheese in tortillas for crispy quesadillas.
**Turkey Fried Rice** Chop turkey and stir-fry with rice, eggs, veggies, and soy sauce for a savory, Asian-inspired dish that’s ready in minutes.
**Turkey Salad** Toss turkey chunks with greens, nuts, apples, and a tangy vinaigrette for a light and refreshing lunch.
**Turkey Breakfast Hash** Sauté turkey with potatoes, onions, and bell peppers, then top with a fried egg for a hearty breakfast.
My favourite thing by far is my mother’s Turkey sandwiches. And like most delicious meals someone else makes, when you try, it never tastes as good. I totally pulled a little kid thing today, called up my mom and asked what was for lunch! Nope, didn’t even take the grandkids over for her to see, I mean they’re in school! And besides they got turkey sandwiches last night when I was at work! Yes, I’m whiny. But my mom is amazing and made me a turkey sandwich! And cat brains for dessert, too! That’s a whole other story.
